Welsh is a traditional dish from the Nord-Pas-de-Calais region of France, inspired by the Welsh rarebit from Wales. This hearty, comforting dish consists of bread topped with a rich, creamy mixture of melted cheese, typically Cheddar, and beer, with mustard and Worcestershire sauce for added flavor. The bread is usually toasted before being covered with the cheese mixture and then baked or grilled until bubbly and golden. Often, a fried egg is placed on top, and the dish is served with a side of French fries and a green salad. Welsh is a popular choice in northern French brasseries and pubs, known for its robust and savory taste.
Preheat the oven to 210°C (th.7). Grate the Cheddar cheese. Remove the rind from the ham and cut the slices to fit the bread slices.
Heat the beer in a small saucepan.
Toast the bread slices in a toaster and spread them with mustard. Top each slice with ham.
Place the topped bread slices side by side in a small baking dish. Spread the grated cheese on top and pour the hot beer over everything.
Bake for 5 to 10 minutes until the tops of the sandwiches are well browned.
