Welsh

Welsh is a traditional dish from the Nord-Pas-de-Calais region of France, inspired by the Welsh rarebit from Wales. This hearty, comforting dish consists of bread topped with a rich, creamy mixture of melted cheese, typically Cheddar, and beer, with mustard and Worcestershire sauce for added flavor.
The bread is usually toasted before being covered with the cheese mixture and then baked or grilled until bubbly and golden. Often, a fried egg is placed on top, and the dish is served with a side of French fries and a green salad. Welsh is a popular choice in northern French brasseries and pubs, known for its robust and savory taste.
