Vegetarian Shepherd's Pie is a hearty and flavorful dish that replaces the traditional meat with various vegetables and legumes, making it a great option for vegetarians. The base typically consists of a mixture of vegetables such as carrots, peas, and corn, often combined with lentils or chickpeas for added protein. This mixture is cooked with onions, garlic, and spices, then thickened with vegetable broth and tomato paste. The filling is topped with a layer of creamy mashed potatoes, which can be made with butter and milk or vegan alternatives. The dish is baked until the top is golden brown and crispy. It's a comforting and nutritious meal perfect for family dinners or gatherings.
Mix the cumin, coriander, curry powder, and cayenne pepper.
Peel and finely chop the onion. Peel the carrot and cut the carrot and celery into small cubes. Sauté the onion in olive oil until it becomes translucent, then add the carrot and celery, sprinkle with half of the spices, and let them brown for a few minutes. Add the lentils, tomato paste, and vegetable stock. Cook over medium heat for 30 minutes.
Meanwhile, prepare the mashed potatoes: peel and cut the potatoes, cook them in boiling water. When the potatoes are tender, mash them, adding the remaining spices.
Preheat the oven to 392°F (200°C). Pour the lentil and vegetable mixture into a baking dish and cover with mashed potatoes. Bake for 25 minutes. Sprinkle with some parsley and serve.
