Squid Ink Spaghetti with Prawns and Sautéed Mushrooms
Squid Ink Spaghetti with Prawns and Sautéed Mushrooms is a striking and flavorful seafood pasta dish. Peel the prawns and cut them along the back with a small knife to remove the black vein under a stream of fresh water. Place them on paper towels.
Peel and chop the garlic. Halve the tomatoes. Wash the mushrooms and cut them into halves or quarters.
Sauté the mushrooms for 10 minutes in a sauté pan with the butter, half the garlic, 1 tablespoon of oil, salt, pepper, and hot pepper.
Lightly brown the prawns in another sauté pan with the remaining garlic and 6 tablespoons of olive oil. Add the tomatoes and thyme, then cover. Let them stew over low heat for 5 minutes.
Cook the spaghetti in a pot of boiling salted water according to the package instructions, then drain.
Return the spaghetti to the pot with the remaining oil and mix. Add the mushrooms and then the prawns with tomatoes. Mix well and serve.
