Peel and finely chop the spring onion. Rinse and pat dry the spinach leaves. Dice the ham into very small cubes. Mix the flour with the baking powder. Grate the provolone cheese using the coarse side of a grater.
Preheat the oven to 180°C (th.6). Grease and flour a loaf pan.
Whisk the eggs with the milk and olive oil, and season with salt and pepper. Fold in the spring onion, ham, provolone, and spinach using a spatula.
Pour half of the batter into the pan and arrange the prunes in a row down the center of the pan. Pour the remaining batter on top and bake for 50 minutes.
Let the cake cool slightly before removing it from the pan.
