Spinach and Ham Crepe Rolls are a delicious and elegant dish featuring thin, savory crepes filled with a mixture of fresh spinach and ham. The crepes are made from a simple batter of flour, eggs, milk, and a pinch of salt, cooked until light and golden. The filling consists of sautéed spinach and diced ham, often combined with a creamy element like ricotta or cream cheese for added richness. The filled crepes are then rolled up and can be served warm or at room temperature, making them perfect for appetizers, brunch, or a light meal. The combination of tender crepes, savory ham, and fresh spinach creates a delightful and satisfying dish.
Prepare the batter. Rinse and wilt the spinach in a pan without drying it beforehand. Once wilted, press out the water and place the spinach in a blender. Add the flour, eggs, and milk, season with salt and pepper, and blend until smooth.
Pour a thin layer of batter into a well-oiled non-stick skillet. Cook on both sides and set aside. Repeat this process 8 times, making sure to mix the batter well each time.
Mix the cream cheese with the Parmesan using a fork. Stir in the chopped walnut halves. Wash and separate the lettuce leaves, removing the stems, and dry them.
Spread the cream cheese mixture on the crepes. Add a layer of ham and then some lettuce leaves. Roll up the crepes tightly and cut them into sections about 1.5 inches wide. Stand them upright on a serving platter.
