Wash the cherry tomatoes and cut them in half. Cook them down in a saucepan with a drizzle of olive oil and the peperoncino, season with salt and pepper. Grate the Pecorino Romano.
Roll out the pizza dough on a floured surface. Cut out 6 discs using a round cutter. Heat the fryer.
Reserve some of the tomato compote for serving. Place a spoonful in the center of each dough disc, leaving a 2 cm border.
Add 1 slice of 'nduja, 1 olive, and some grated Pecorino on each pizzetta. Fold the dough edges over and seal well with your fingers, then gently flatten to form a disc.
Fry the pizzettas one by one in the hot oil until they are puffed and golden. Place them on paper towels, transfer to a serving dish, add a small spoonful of tomato compote
