Peel the shrimp and slit their backs to remove the black vein under cold running water.
Cook the fava beans for 5 minutes in a pot of boiling salted water, then remove them with a slotted spoon and plunge them into an ice bath for 5 minutes.
In the same cooking water, cook the shrimp for a few minutes until they turn pink. Drain them.
Remove the membrane around the fava beans. Grate the lemon zest. Peel and finely chop the garlic. Remove the leaves from the parsley and finely chop them. Cut the stems off the half bunch of coriander and chop all the leaves.
Mix all the ingredients in a salad bowl. Season with salt and pepper, then drizzle with olive oil. Arrange the fava bean salad with the shrimp and enjoy.
