  • 4 Large organic potatoes Bintje type
  • Juice of 1 lemon
  • 2 Shallots
  • 0.5 Bunch flat-leaf parsley
  • 0.5 Bunch chives
  • 6.8 fl oz Thick cream
  • Salt
  • Pepper

Instructions
 

  • Preheat the oven to 392°F (th.6-7). Wash the potatoes thoroughly and dry them. Wrap each potato in aluminum foil and place them on a baking sheet. Bake for 30 minutes.

  • Peel and finely chop the shallots. Squeeze the lemon to extract the juice. Wash, dry, and finely chop the chives and parsley. Whisk the cream in a bowl with the chives, parsley, chopped shallots, lemon juice, salt, and pepper.

  • Remove the foil-wrapped potatoes from the oven, open the foil, and cut the potatoes in half lengthwise. Place a large spoonful of sauce in each potato and serve immediately.
