Heat 2 tbsp of olive oil in a pan and brown the chicken croquettes for 5 minutes on each side. Sprinkle with paprika and set aside.
Lightly toast the burger buns using a toaster.
While the buns are toasting, drain the mozzarella and cut it into slices. Peel the avocados and slice them.
Brush the burger buns with half of the remaining olive oil. Layer half of the avocado slices, mozzarella slices, chicken croquettes, the remaining avocado slices, and arugula on the buns. Drizzle with the remaining olive oil. Season with salt and pepper.
Close the burger buns and serve immediately.
