Wash and dry the nectarines. Cut them into 6 wedges each (reserve 2 wedges).
Drizzle the nectarine wedges with half of the olive oil and cook them on a griddle or grill for 3 minutes. Season with salt and pepper.
Emulsify the remaining olive oil with lemon juice and the reserved nectarine wedges, cut into small cubes.
Add half of the chopped basil and the crushed pistachios to the emulsion. Season with salt and pepper.
Place a basil leaf and a mozzarella ball on each nectarine wedge. Secure with a skewer, drizzle with the basil vinaigrette, and serve.
