Drain and cut the mozzarella into 1.2-inch (3 cm) squares. Pat them dry with paper towels.
Place the flour on a plate. Beat the eggs in a shallow dish, and season with salt and pepper.
Remove the basil leaves from the sprigs. Coarsely chop the almonds and mix them with the breadcrumbs, basil, and Parmesan.
Preheat the deep fryer to 180°C (350°F). Roll the mozzarella portions in the flour, shaking off the excess. Dip them in the beaten eggs, then coat them in the breadcrumb mixture. Place them directly into the hot oil and fry until golden brown, a few minutes.
Remove the mozzarella bites from the oil with a slotted spoon and drain on paper towels. Serve hot while the mozzarella is still gooey.
