Ingredients
  

  • 1 thick slice of bone-in ham about 6.3 ounces
  • 4 slices chorizo
  • 1 shallot
  • 1 spring onion
  • 8 sprigs flat-leaf parsley
  • 1 1/4 cups Bourgogne AligotĂ© wine or other white Burgundy wine
  • 2 sheets gelatin
  • 1 teaspoon crushed pink peppercorns
  • Pepper

Instructions
 

  • Rehydrate the gelatin sheets by soaking them in a bowl of cold water for 10 minutes.

  • Chop the parsley leaves, shallot, and spring onion along with some of the tender green parts.

  • Gently warm half of the wine with the onion and shallot. Dissolve the drained gelatin in the warm mixture while stirring, without letting it boil. Add pepper and pink peppercorns.

  • Remove from heat and add the remaining wine and chopped parsley. Mix well and set aside.

  • Cut the ham into small cubes. Remove the skin from the chorizo and cut it into tiny cubes.

  • Distribute the ham and chorizo evenly among 6 verrines (small glasses).

  • Pour the parsley-infused gelatin over the ham and chorizo. Allow them to set in the refrigerator for at least 2 hours.
