Rehydrate the gelatin sheets by soaking them in a bowl of cold water for 10 minutes.
Chop the parsley leaves, shallot, and spring onion along with some of the tender green parts.
Gently warm half of the wine with the onion and shallot. Dissolve the drained gelatin in the warm mixture while stirring, without letting it boil. Add pepper and pink peppercorns.
Remove from heat and add the remaining wine and chopped parsley. Mix well and set aside.
Cut the ham into small cubes. Remove the skin from the chorizo and cut it into tiny cubes.
Distribute the ham and chorizo evenly among 6 verrines (small glasses).
Pour the parsley-infused gelatin over the ham and chorizo. Allow them to set in the refrigerator for at least 2 hours.
Serve chilled with chips.
