On a baking sheet, fold and place a slice of cured ham, then a slice of raclette cheese, and then some potato rounds. Top with another slice of raclette cheese.
Repeat the process to make 6 stacks.
Cut large rectangles from the shortcrust pastry and place each rectangle over the prepared stacks, sealing the edges well.
Bake for 20 minutes at 356°F.
