Pour the beer into a saucepan with the brown sugar. Reduce by half over low heat. Add the veal stock and cook until a syrupy consistency is obtained. Season with salt and pepper. Keep warm.
Preheat the oven to 464°F (Gas mark 8). Peel the potatoes, wash them, and cut them into fries.
Soak the fries in water and rinse them several times. Pat them dry. Heat the frying oil to 284°F. Cook the fries for 5 minutes. Drain them, let them cool, and increase the oil temperature to 338°F. Fry them again for 2 to 3 minutes, shaking occasionally. Stop cooking when they are golden brown.
Drain the fries and transfer them to an ovenproof dish. Add the Maroilles cheese cut into large cubes. Bake for 15 minutes. Watch the cooking process and remove the fries as soon as the cheese starts to melt. Drizzle with a bit of the beer sauce. Enjoy very hot with a green salad.
