Remove the stems from the mushrooms and clean them with a paper towel. Slice them. Cut the ham slices into strips. Dice the blue cheese.

Preheat the oven to its maximum temperature, using the convection setting. On one half of the dough circle, spread the crème fraîche, then add the mushrooms, ham strips, blue cheese, and mozzarella. Break the whole egg in the middle of the filling.
Fold the dough in half to form a turnover. Fold the edges of the dough to seal the calzone well.
Mix the egg yolk with a little water and brush the turnover with it using a kitchen brush. Bake for 15 minutes. The calzone should be golden brown.
