Preheat the oven to 482°F (Gas mark 8-9). Roll out the pizza dough on a floured surface into a square of 5 mm thickness. Transfer it onto a sheet of parchment paper.
Place the chicken breast in a pan with the oil, season with salt and pepper. Brown it on both sides without cooking it completely. Remove and slice thinly.
Cut the Maroilles into thin slices. Wash and chop the chives. Whisk the fresh cheese with 2/3 of the chives. Season well with pepper. Spread this mixture over the dough.
Thinly slice the endives and scatter them on top, then add two-thirds of the chicken and half of the Maroilles. Fold the corners of the dough towards the center to form a calzone. Transfer to a baking sheet.
Distribute the remaining chicken and Maroilles on the pizza. Bake for 15 minutes, until the dough is well cooked.
Remove the pizza from the oven, sprinkle with the remaining chives, and enjoy.
