Bring the milk to a simmer in a saucepan with 1.7 fl oz of water and a pinch of salt. Gradually add 8.8 oz of polenta while stirring over low heat for 2 minutes.
Remove from heat, cover, and let it sit for 3 to 5 minutes to allow the polenta to thicken.
Stir in 1 oz of Parmesan, season with pepper, and mix well. Spread the polenta into a parchment-lined baking dish to a thickness of about 1 inch (2.5 cm), pressing it down firmly. Let it cool, then cover with plastic wrap and refrigerate for 4 hours until firm.
Unmold and cut the polenta into 1-inch (2.5 cm) cubes. Preheat the frying oil to 180°C (350°F).
Roll the cubes in the remaining uncooked polenta to coat them lightly.
Fry the cubes in batches of 5 or 6 until golden brown.
Remove and drain on paper towels. Sprinkle with a bit more grated Parmesan and serve.
