Breton-Style Sausage Galette is a traditional dish from the Brittany region of France, known for its savory buckwheat crepes. The galette is made from a simple batter of buckwheat flour, water, and a pinch of salt, cooked into thin, crisp crepes. The filling features flavorful sausages, often grilled or pan-fried, nestled inside the folded galette. Typically, the galette is also filled with ingredients like caramelized onions, cheese, or mustard, adding layers of taste. Served hot, these sausage galettes are a delicious and hearty meal, embodying the rustic and comforting flavors of Brittany.
In a cast iron pot, brown the sausages for 5 minutes on each side. Set aside.
In the same pot, sauté the sliced onions in the sausage drippings until golden brown.
Once the onions are well browned, add the sausages back in, and cover with white wine and chicken broth. Simmer until the sausages are fully cooked and the liquid is reduced.
Melt some butter in a large skillet and place a buckwheat galette in it. Layer slices of sausage and onions on the galette.
Fold the sides of the galette over the filling and serve hot.
