Preheat the oven to 350°F (180°C). Roll out the pastry on a floured surface. Cut out 6 discs and line them in 6 buttered tartlet molds. Prick the bases with a fork and cover with parchment paper and baking weights.
Bake for 10 minutes, then remove the paper and weights and continue baking for an additional 20 minutes.
Roughly chop the white chocolate. Grate the lime zest. Dissolve the cornstarch in the milk and bring it to a boil. Pour the hot milk over the chocolate and whisk until fully melted. Stir in the lime zest.
Pour the white chocolate cream into the cooled pastry shells and top with blueberries. Chill the tartlets in the refrigerator for 2 hours. Before serving, garnish with mint sprigs.
