Cut the bell peppers in half and remove the seeds. Place them on a baking sheet, skin side up.
Grill in the oven for 15-20 minutes, until the skin blackens.
Remove the skin from the chorizo and cut it into tiny cubes.
Take the peppers out of the oven. Peel off the skin and blend them with 1/3 cup (80 ml) of water, the heavy cream, ketchup, and thyme leaves. Season with salt.
Add the Espelette pepper and chorizo cubes to the mixture.
Pour the mixture into square ice cube trays.
Insert sticks and freeze for 4 hours.
