  • 2 very ripe Bananas
  • 1 Banana for decoration
  • 2 Eggs
  • 7 tablespoons Butter
  • 1 cup Chocolate Chips
  • 1/3 cup Light Brown Sugar
  • 1 2/3 cups Flour
  • 10 Pecan Nuts
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Brown Sugar

Instructions
 

  • Preheat the oven to 356 °F (180 °C).

  • Whisk the 2 eggs with the light brown sugar (if you don’t have light brown sugar, you can use regular brown sugar).

  • Melt the butter. Add it along with the 2 mashed ripe bananas, flour, baking powder, and vanilla extract. Mix well, adding each ingredient one at a time.

  • Fold in the chocolate chips, then pour the batter into a greased loaf pan.

  • Cut the remaining banana in half and place the two halves, cut side up, gently pressing them into the batter. Add the pecan nuts.

  • Lightly sprinkle with brown sugar for caramelization and bake for 45 minutes.
