Ingredients
  

  • 2.2 lbs raw langoustines
  • 4 tomatoes
  • 1 shallot
  • 1 small bunch cilantro
  • 1 glass white wine
  • 3.4 fl oz whiskey
  • 3 tablespoons olive oil
  • salt
  • pepper

Instructions
 

  • Rinse and drain the langoustines. Peel and chop the shallot. Rinse, pat dry, and chop the cilantro. Rinse, dry, and blend the tomatoes.

  • Heat the olive oil in a sauté pan and brown the langoustines. Add the chopped shallot and continue cooking for 5 minutes, stirring.

  • Pour the whiskey into the pan and, off the heat, flambé. Pour in the white wine, add the tomato purée and cilantro. Season with salt and pepper and put back on the heat for 3 minutes.
