Soft Italian-Style Sandwiches
Ingredients
- 12 mini burger buns
- 12 thin slices of mortadella
- 4.2 ounces provolone cheese
- 1 large handful of arugula
- 2 sprigs of thyme
- 4 tablespoons black and green pitted olives
- 3 tablespoons tomato sauce
- 3 tablespoons olive oil
- 2 tablespoons vinegar
- Pepper
Instructions
- Chop the olives. Mix them in a bowl with the tomato sauce and thyme leaves. Add pepper to taste.
- Wash and dry the arugula. Place it in a bowl.
- Cut the provolone cheese into thin slices.
- Whisk the olive oil with the vinegar. Season with salt and pepper, then pour over the arugula and toss to combine.
- Cut the buns in half. Press down the base of the buns with your fingers to flatten them slightly.
- Spread some olive sauce on each bun base, add a folded slice of mortadella, 2 slices of provolone, and a bit of arugula. Top with more olive sauce.
- Close the sandwiches with the top half of the buns.
- Cover with plastic wrap and refrigerate until ready to serve.
